Chembappam

Ingredients

  • DH Rice Powder (idiyappam / pathiri podi) – 1 cup
  • Egg – 1
  • Thick coconut milk – to make the batter
  • Cardamom powder – ¼ tsp
  • Baking soda – ¼ tsp
  • Sugar – as per taste
  • Salt – 1 pinch
  • Oil – for frying
Whisk the egg with sugar, salt and cardamom powder. Add this to the rice powder and mix well to make a smooth, thick batter that can be dropped into the oil. Heat oil in a pan, pour the batter like drops and fry till they are golden on the outside.
